The Art of Mozzarella

The restaurant that took Italy’s iconic cheese to the next level

Born from the Neapolitan word obicà, meaning “here it is!” to indicate something that surprises and delights, Obicà embodies the joy of discovery through simplicity and authenticity. Since opening the world’s first mozzarella bar twenty years ago, it has become a global symbol of Italian taste and modern conviviality, with locations spanning from London and New York to Tokyo and Porto.

In Rome, the Obicà branch near the Parliament captures this spirit through a minimalist, welcoming design that blends contemporary elegance with informal warmth. The focus, as always, is on carefully sourced, seasonal ingredients that showcase the essence of Mediterranean cuisine interpreted with a cosmopolitan touch.

At the heart of the menu is the mozzarella di bufala campana DOP: classic, smoked, or in bocconcini form, each certified for its origin and superior quality. The pizzas, light yet fragrant, owe their airy crusts to a dough that rises naturally for over 48 hours. Signature toppings range from the beloved “Bufala DOP” to bold combinations like “‘Nduja” with spicy sausage from Spilinga, mozzarella, and organic tomato.

Pasta lovers will be drawn to the cacio e pepe reinvented with Peperone Crusco di Senise PGI, where Gragnano spaghettoni meet a hint of southern spice. Second courses highlight Italian classics with a twist—think eggplant parmigiana, vibrant salads, and the indulgent Burrata Burger layered with Chianina beef, burrata, rolled bacon, rocket salad, marinated courgettes, homemade tomato ketchup, and roasted potatoes.

For a fitting finale, the lemon Caprese cake paired with Madagascan vanilla gelato delivers a bright, velvety close—true to Obicà’s philosophy of surprising simplicity. Via dei Prefetti, 26a.
