Refined seasonal cuisine meets sweeping views over ancient Roman temples


Perched atop the 47 Boutique Hotel, the 47 Circus Roof Garden offers sweeping views from its magnificent terrace over the ancient Foro Boario, framed by the Temples of Portunus and Hercules Victor. It’s a rarefied, time-suspended setting, far from the city’s bustle.

The cuisine is under the care of Chef Maurizio Lustrati, who leads the restaurant, awarded with the Due Forchette by the Gambero Rosso culinary guide. Lustrati crafts a refined, seasonal menu built on carefully sourced ingredients, treated with restraint to highlight clarity, balance, and lightness. Sustainability runs through the concept, featuring ingredients from local supply chains and 47 Hortus, the hotel’s organic estate in the Parco Regionale Marturanum, which produces the house extra-virgin olive oil served exclusively here. The summer menu celebrates Mediterranean flavors with a fresh and elegant selection of dishes. Highlights among the starters include seabass with watermelon and basil powder. First courses showcase risotto with zucchini blossoms and anchovies from the Tyrrhenian Sea, enriched by Armagnac-infused bottarga from Lazio.

The main courses offer bold, contemporary creations such as teriyaki eggplant with miso and hazelnuts. To finish, the chocolate creamy with raspberry and extra-virgin olive oil stands out as a decadent dessert.

Weekday lunches lean lighter, while aperitivo brings seasonal bites paired with cocktails. Two tasting menus (4 or 6 courses) are complemented by a cellar of over 200 Italian labels, international sparkling wines, and an extensive gin selection. The courteous and professional service completes a memorable experience, satisfying the spirit, sight, and palate.
